This May the 4th... PYRO’s Chef de Cuisine Max Straczek invites you to put your lightsabers down and pick up your forks for a 5-course chef’s menu, inspired by the Star Wars universe.
Course I: “Twin Suns”
HEIRLOOM TOMATO & BURRATA
Charred cherry tomatoes, smoked sea salt, basil oil, pistachio pesto
Drink Pairing: Sparkling Rosé or a "Skywalker Sunrise" cocktail made with prosecco, blood orange & thyme
Inspiration: The twin suns of Tatooine
Course II: “Dagobah Garden”
FOREST MUSHROOM & TRUFFLE SOUP
Wild mushrooms, crispy enoki, truffle oil, roasted garlic toast
Pairing: Earthy Pinot Noir or a “Green Force” Matcha & Gin Cocktail
Inspiration: Yoda’s swampy home planet
Course III: “The Dark Side”
CHARCOAL-GRILLED SQUID INK GARGANELLI
Black garlic cream, crispy pancetta, pecorino dust
Pairing: Full-Bodied Syrah or “The Vader” Cocktail made with black vodka, espresso, and vanilla
Inspiration: Darth Vader– dark, bold, unforgettable
Course IV: “Lightsaber Duel”
SOUS VIDE DUCK BREAST & RED WINE DEMI
Beet purée, Roasted purple beets, braised cabbage, red wine demi, bitter greens. crispy corn polenta on the side
Pairing: Tempranillo or a “Jedi vs Sith” layered cocktail made with blue curaçao, pomegranate, and vodka
Inspiration: The clash of red and blue lightsabers
Course V: “The Sweet Rebellion”
BLUE MILK PANNA COTTA
Infused with vanilla bean, topped with poach dates, lemon tuile
Pairing: Moscato d’Asti or a “Blue Bantha” dessert martini made with RumChata, coconut milk, and blue curaçao
Inspiration: Luke’s iconic blue milk

About your instructor
Chef Max Straczek
After rising through the culinary ranks in Vancouver, Chef Max Straczek spent five years abroad working and traveling through London, Spain, Cyprus, and finally to Poland, where he was an integral part of opening Atelier Amaro - the country’s first restaurant to be awarded a Michelin star!
Upon his return to Canada, Straczek first held the title of Concept Chef for both Fable Kitchen and The Diner, before lighting the fire at PYRO! Max is bringing the heat to L’OCA Quality Market, and is dedicated to sharing a wealth of experience with the next generation of great chefs!
