L’OCA Quality Market, ORO, and PYRO are proud to source premium marbled, full carcass North Country Beef from the Jespersen’s family farm, located just outside of Mayerthorpe, Alberta.
Brad, Rickie, Jax, and Jersey Jespersen oversee an Angus/Wagyu crossbreeding program that consistently achieves Prime grading, offering premium, highly marbled beef, a distinction held by less than 5% of all Canadian beef.
North Country’s
longer, slower feeding and finishing period, ranging between 18 to 30 months, combined with an optimized diet formulated according to the needs of each cow, allows for natural growth and produces the highest quality, heavier, and better-muscled animals.
L’OCA Quality Market dry-ages full carcasses from North Country in-store to create a more tender and flavourful product, that’s available at our butcher counter and in our restaurants.
