Sourced from the shank, femur, or humerus of North Country Beef's raised cattle, L’OCA butchers cut these bones lengthwise to reveal the rich, buttery hidden treasure within. Once roasted, the marrow softens to a scoopable consistency, ready to be enjoyed on toasted bread, stirred into soups and stews, or whisked into gravies and sauces.

Care and use

To roast marrow bones, preheat oven to 450°F (230ºC). Place bones marrow-side up, on a rimmed baking sheet. Roast until lightly browned, and the marrow is soft, about 20 minutes.
