Literally meaning ‘cute pig’ in French, L’OCA’s butchers trim a whole pork tenderloin to perfection, smother it with a layer of Dijon mustard, top it with fresh tomato slices, garnish with Herb de Provence, and wrap it in caul fat to encase the meats’ natural flavours and prevent it from drying out.

Care and use
RECOMMENDED COOKING INSTRUCTIONS
Preheat oven to 425ºF.
Place Mignon du Porc into an oven proof dish lined with parchment paper, and bake until golden, between 20-25 minutes.
To test for doneness, insert a thermometer into the thickest part of the roast. A safe internal temperature 160 ºF / 71ºC.
